What The Free?! October 2021

I can’t believe it’s already November! With the end of the year just around the corner, I’m making the best of 2021!

November is also home to one of my favorite holidays, Thanksgiving! Whether you celebrate with a small group of friends or a large family, there is something so amazing about cooking some yummy foods and spending time with loved ones. What are some of your favorite Thanksgiving recipes?

I started hosting Thanksgiving a few years ago and couldn’t believe how much cooking it involved. From prepping foods, the night before to waking up at 5:30am on the morning of, I was completely exhausted by the time the meal was ready to eat! I have included some delicious recipes and websites below to help you prepare for this year’s scrumptious holiday.


Cranberry Sauce

  • 1 cup (200g) sugar (Stevia or alternative sugar can also be substituted)
  • 1 cup water
  • One 12-ounce package fresh or frozen cranberries

Optional: Pecans, orange zest, raisins, cinnamon, nutmeg, allspice

Heat up the water until boiling. Add in the cranberries. Simmer for 12 minutes or until the cranberries have mostly popped. Then add the sugar and optional items and place in a jar/container overnight to allow it to cool.

Mashed Potatoes


  • 2.5 pounds Yukon Gold potatoes 
  • 1 clove garlic, minced
  • Sea salt
  • 3 tablespoons of butter
  • 1 cup milk (whole milk works best)
  • 2 ounces cream cheese

Cut potatoes with skin on into evenly sized chunks. Boil for 10-12 minutes until soft. Add in the garlic and salt. In a separate man, heat together the milk and butter along with a pinch of salt. Remove the potatoes from the water, pat dry, and begin smashing (recommend using a potato masher). Stir in the butter/milk mixture, cream cheese, and mix together well. You can choose to top it with some chives.

Turkey Prepping (not full recipe)

I am Portuguese, so I prepare my turkey a bit differently. I remove the giblets and wash the turkey thoroughly. I keep the neck in the pan.

Once my turkey has brined, I coat it with Sazon Goya seasoning with azafran. I also cut up some potatoes and Portuguese chourico (Gaspar Chourico can be purchased at most Publix locations in Florida near the sausage/hot dog section) place it around the turkey along with some white wine (water can also be used). I season it with lots of salt, Portuguese crushed pepper (this is a bit difficult to find in grocery stores, so I recommend pepper flakes if unavailable). Lastly, I place some of my prepared stuffing inside the turkey before it cooks. I would love to hear how you prepare your main course!
